In a bowl place cut into slices and add 1 liter of water. Heat until it boils for about 20 minutes.
Once the water has turned a deep yellow color, remove from heat and allow to cool. When already taken at room temperature add the zest of the file and the lemon as well as the juice of each one. Finally incorporate the honey.
Mix well until everything is perfectly integrated and place in different glass jars without filling to the edge and leaving a few centimeters between the preparation and the lid.
Close hermetically and allow to ferment at room temperature for two or three days until you begin to notice the bubbles on the surface.
At times shake the bottle so that the properties are going together and when it has fermented completely save the refrigerator.
This drink is ready to be consumed. We will notice the flavor of the honey but it will not be sweet, so that at the moment of taking it we can add a little stevia and paste to separate the solids and drink only the liquid.
It is a refreshing and a little effervescent tonic that you can drink daily, but only half a glass per day.
To achieve a more intense effect you can replace the water with an infusion of basil and add a piece of ginger to the preparation.
